Baked Cauliflower in Red Wine and Tomatoes Recipe

½ cauliflower, cut into florets
½ cup broccoli
1 small onion, finely chopped
1 can Italian tomatoes, diced
3 garlic cloves, minced
½ cup red wine
1 tablespoon capers, rinsed
2 tablespoons olive oil
1 tablespoon parsley, chopped
½ tablespoon fresh rosemary, chopped
Asiago or cheese of choice, grated
Feta cheese, crumbled
Pine nuts
Salt and pepper

Recipe Instructions

Preheat oven to 350 degrees.

Heat the olive oil in a non-stick frying pan and fry the onion until soft. Add the garlic and cauliflower and sauté for 5 minutes. Add the broccoli, tomatoes, red wine, capers, rosemary, parsley and salt and pepper and stir together.

Place the mixture into a buttered oven-proof dish and sprinkle the cheese and the pine nuts over the top. Bake for 20 minutes then add the feta and bake for another 10 minutes.

To serve.
Serve with plain pasta and bread.
