Cauliflower and Anchovy Salad Recipe

A scrumptious dish that is suitable for dinner dates
Yield: 2    Preparation Time: 10 minutes    Cooking Time: 15 minutes


For the salad:
1 small cauliflower
6 anchovy fillets
10 stoned black olives quartered
2 eggs
1 tablespoon capers, drained & rinsed
Salt and pepper
Chopped parsley

For the vinaigrette:
6 tablespoons olive oil
2 tablespoons good wine vinegar
Salt & pepper

Recipe Instructions

Prepare the ingredients.
Cook the cauliflower in boiling water for 10 minutes in salted water, drain and leave to cool. Hard boil the eggs, leave them to cool a little then shell and chop coarsely. Chop up the anchovy fillets.

Make the salad.
Mix together the cauliflower, anchovy, eggs, capers and olives.

Make the dressing.
Mix all the vinaigrette ingredients together in a jar and shake well. Mix the dressing and the parsley.

To finish.
Pour the dressing over the salad and allow to stand for 10 minutes.
