Cauliflower and Beef Stew Moroccan style Recipe

1 head cauliflower
½ onion, diced
1 ½ lbs beef stew meat
1 tablespoon tomato paste
1 cube beef bouillon
2 tablespoons olive oil
¼ cup fresh parsley, finely chopped
2 medium cloves garlic
½ teaspoon ginger
¼ teaspoon turmeric
1 teaspoon cumin
½ teaspoon salt
½ teaspoon black pepper

Recipe Instructions

Prepare the cauliflower.
Remove the leaves from the cauliflower and cut off the bottom. Break the cauliflower into large pieces, rinse and set aside to be used later.

Cook the beef.
Heat the oil in a saucepan and brown the beef on all sides. Add enough water to cover the beef and put everything else into the pan except the cauliflower. Cover with a lid and simmer for 40 minutes stirring occasionally.

To finish.
Place the cauliflower in the saucepan making sure that it is fully covered with the sauce. Replace the lid on the saucepan and simmer for 15 minutes until the cauliflower is done.
