Cauliflower and Broccoli Pasta with Mustard Sauce Recipe

An ideal meal for those pasta lovers yet still wants to be healthy

1 head cauliflower, broken into florets
1 head broccoli, broken into florets
1 medium onion, minced
2 tablespoons grated Parmesan cheese
2 cups uncooked whole-wheat spiral pasta
1 red bell pepper, chopped
2 garlic cloves, minced
1 tablespoon olive oil
2 tablespoons Dijon mustard
1 tablespoon balsamic vinegar
¼ teaspoon pepper
2 tablespoons chopped fresh parsley
Pinch of salt

Recipe Instructions

Fry the ingredients.
Heat the oil and add the onion, garlic and red pepper. Sauté over a medium heat for 3 – 5 minutes. Add the parsley, mustard, vinegar, salt and pepper and cook for a further 3 minutes until completely heated. Remove from the heat, cover and set aside.

Cook the pasta.
Boil the pasta in boiling water for 5 minutes. Add the cauliflower and broccoli and cook for another 3 minutes until the vegetables and the pasta are tender. Drain well.

To finish.
Combine the pasta mixture and the mustard mixture together and toss well. Sprinkle with the cheese and serve warm.
