Cauliflower and Broccoli Soup Recipe

An ideal winter warmer that can be served with a toasted bread
Yield: 4    Preparation Time: 5 mins    Cooking Time: 15 mins
A very simple but delicious cauliflower and broccoli soup recipe. Provides a good base for adding your own tweaks.

Ingredients

1 cauliflower, cut into even-sized pieces
1 broccoli, cut into even-sized pieces
750ml vegetable stock
3 large cloves of garlic, thinly sliced
1 onion, diced
1 tablespoon olive oil
Salt & pepper

Recipe Instructions

Cook the vegetables.
Heat the olive oil in a large pan and fry the onions and garlic until they begin to soften and become aromatic.

Add the broccoli, cauliflower and vegetable stock and allow this to simmer covered until the vegetables are cooked.

Blend.
Pour the soup into a blender and blend until smooth. Return to the stove and reheat adding seasoning to taste.
