450g cauliflower florets
225g onions, skinned and chopped
125g Blue Stilton cheese, crumbled
25g English Cheddar cheese, grated
Another 30ml flour
¼ teaspoon salt
Freshly ground pepper
Make the dough.
Rub together 75g butter, 175g flour and salt. Use a little water to bind to a dough and chill in the refrigerator for 10 minutes.
Bake the dough.
Roll out the pastry and line a 9 inch flan dish. Chill again for 10 – 15 minutes then bake for 10 – 15 minutes in the oven at 200C until set.
Cook the cauliflower.
Boil the cauliflower in salted water for 4 – 5 minutes then drain well and set aside to cool.
Make the onion sauce.
Melt the remaining butter in a pan and sauté the onion until soft. Stir in the 30ml flour and cook gently stirring for 2 minutes. Remove the pan from the heat and gradually stir in milk. Return to the heat and bring to the boil. Cook stirring continuously until the sauce thickens and add pepper to taste.
Sprinkle the Stilton cheese over the base of the flan dish and arrange the cauliflower on top. Spoon in the onion sauce and sprinkle with Cheddar cheese. Bake for 25 – 30 minutes at 190C until golden and bubbly.
