Cauliflower Goulash Recipe

½ medium cauliflower
225g carrots
225g potatoes
225g courgettes
400g tomatoes
2 medium onions
½ green pepper, de-seeded
1 rounded tablespoon wholemeal flour
275 ml hot water, mixed with 1 teaspoon tomato puree
2 tablespoons olive oil
150 ml Greek yoghurt
1 tablespoon paprika
Cayenne pepper
Salt and Pepper

Recipe Instructions

Preheat the oven to 180C.

Prepare the vegetables.
Prepare all the vegetables by cutting them into chunks.

Heat the olive oil and fry the onion until it is soft. Stir in the flour and the majority of the paprika and cayenne pepper. Cook for a minute and then add the tomatoes and water. Bring this to the boil stirring constantly. Add the vegetables, salt and pepper and stir well.

Transfer all this to a casserole dish and bake for 30 – 40 minutes. Once done, remove from the oven and stir in the yoghurt and sprinkle the rest of the paprika on top.

To serve.
Serve while still piping hot with rice.
