Cauliflower Mash Recipe

A non-fattening salad perfect for those weight watchers

This is a less fattening alternative to mashed potatoes as it is low in carbohydrates and high in nutrients. You can add to the flavor by including garlic or cheese, even both if you like.


1 medium head raw cauliflower
ΒΌ cup butter, milk or cream
Salt and pepper to taste

Minced garlic (a clove or two)
Garlic powder (1/2 to 1 teaspoon)

Recipe Instructions

Prepare the cauliflower.
Break the cauliflower up into florets and cook it until it is tender.

Add the cauliflower and remaining ingredients into a food processor and blend together until smooth. You can also add the garlic or cheese for extra flavor.
