Cauliflower Mornay Recipe

A vegetarian dish that is healthy and yummy

Ingredients

1.5kg cauliflower
800ml Mornay Sauce
75g grated Parmesan cheese
50g melted butter
juice of 2 lemons
salt

Recipe Instructions

Prepare the cauliflower.
Trim away the outer leaves of the cauliflower retaining some of the inner tender leaves. Hollow out the stem of the cauliflower to about 2cm deep and then wash in cold salted water.

Boil.
Place the cauliflower in boiling salted water containing the lemon juice. Bring back to the boil and simmer for 8 minutes.

Grill.
Remove the cauliflower from the stove and drain well. Coat with the Mornay sauce, sprinkle with Parmesan cheese and pour over the melted butter. Glaze under the grill.
