Cauliflower, Red Onion and Raisin Salad Recipe

A perfect salad for those vegetarians

A delicious and healthy cauliflower salad that is quick and easy to make.

Ingredients

1 large cauliflower, leaves removed and cut into small florets
1 medium red onion
40g raisins
35g pine nuts
65ml olive oil
Handful of chopped mint
Handful of chopped parsley
Pinch saffron
Extra virgin olive oil

Recipe Instructions

Cook the cauliflower.
Fill a saucepan with salted water and bring to the boil. Once boiling add the saffron and cauliflower and boil for about 5 minutes. Remove the cauliflower and drain off all excess water. Place on a tray and allow to cool.

Cook the other ingredients.
Heat the olive oil in a frying pan and fry the chopped onion for 8 minutes stirring regularly. Next cook the nuts and raisins for about 4 minutes then drain off the excess oil and place them in a large bowl.

Finish the salad.
Mix together the nuts, raisins, cauliflower and onion and drench with the olive oil. Mix in the herbs and toss.
