Cauliflower, Spinach and Tomato Curry Recipe

A scrumptious meal that is great for lunch and dinner dates
Yield: 2    Preparation Time:     Cooking Time: 30 minutes

Ingredients

1 small cauliflower, cut into bite-sized florets
1 onion, sliced
3 ripe plum tomatoes, quartered
2 tablespoons curry paste
100g spinach, roughly chopped
Oil for frying
Naan bread, to serve

Recipe Instructions

Fry.
Add the 2 tablespoons oil in a large frying pan and fry the onions for about 7 minutes until soft and golden. Add the curry paste and cook for another few minutes.

Boil.
Add in the cauliflower, tomato and 300ml water and then bring to the boil. Simmer for 10 – 15 minutes until the cauliflower is tender and the tomato has broken down. Stir in the spinach until it has welted.

Serve.
Serve with warm naan bread.
