Chicken and Cauliflower Stew Recipe

Another chicken dish partnered with cauliflower great for chicken lovers
Yield:     Preparation Time:     Cooking Time: 20 – 25 minutes
This chicken dish is a wonderful warming stew that cooks in one pot.

Ingredients

2 skinless chicken breasts
1 small zucchini (chunks)
1 small onion (diced)
½ cauliflower (florets)
½ yellow pepper (chunks)
5-6 small carrots (chunks)
1 thick slice fresh fennel (diced)
¼ red pepper (chunks)
1 garlic clove (crushed)
1-2 inch fresh ginger (grated)
1 teaspoon turmeric
Olive Oil
Water
Salt and Pepper

Recipe Instructions

Prepare the stew.
Drizzle some olive oil in a pressure cooker and gently fry the garlic, fresh ginger and turmeric for 2 minutes stirring continuously. Place the chicken breasts on top and cover this with the chopped vegetables. Place the cauliflower florets on top of the chopped vegetables and add enough water so that you can just see it coming through the vegetables.

Cook.
Cover with the lid and bring this to the boil. Turn down the heat to the lowest setting and cook the stew for 20 – 25 minutes. Once cooked season with salt and pepper.
