This raw cauliflower salad is rich tasting and very nutritious.

Ingredients

Cauliflower
Radishes
Black-Eyed Peas
Radicchio
Lemon-Dill Vinaigrette
Olive Oil
Salt and pepper

Recipe Instructions

Prepare the raw ingredients.
Cut the cauliflower into small pieces, chop the radicchio in smaller chunks and slice the radishes into rounds. Mix these all together in a salad bowl and add the pre-boiled black-eyed peas.

Finish.
Add salt and pepper to taste and pour over the Lemon-dill vinaigrette abundantly. If you need to you can add more olive oil.
