Curried Creamed Cauliflower Soup Recipe

Curry is the perfect flavoring for cauliflower and this proves to be a delightful soup.


800g cauliflower
1 medium-sized onion
1 celery stalk
4 parsley stalks
1 teaspoon corn flour
800ml chicken stock
2 tablespoons mild curry powder
200ml single cream
2 tablespoons chopped coriander
1 clove garlic
1 dried chili pepper, seeded (optional)

Recipe Instructions

Prepare the vegetables.
Trim, wash and cut the cauliflower into small pieces. Trim and slice the celery. Peel and slice the onion. Both the onion and the celery must be thinly sliced. Rinse the parsley and chop coarsely.

Cook the soup.
Add the curry powder and the chili to the chicken stock. Put all the vegetables and the stock into a large saucepan, cover the saucepan and bring the soup to the boil. Simmer for 25 minutes.

Remove from the heat and allow to cool. Once cooled, blend until smooth.

Mix the flour with the cream and stir into the soup. Place into a saucepan and simmer over a low heat until it boils. Once boiling it will thicken. Remove from the heat and set aside until you are ready to serve.

To serve.
Season with salt and pepper and sprinkle with coriander. Fry small squares of bread that have been rubbed with garlic in butter to serve with the soup.
