How to Preserve Cauliflower in Wine

Wine can preserve the beautiful color of cauliflowers and add a distinct yet delicious taste to it.  Here is a simple recipe on how you can preserve every wonderful thing about cauliflowers.

For this very simple recipe, you would only need a few things:

~A kilogram of cauliflower

~1/2 liter of white wine

~1/2 liter of vinegar

~Extra virgin olive oil

~Salt

~Black peppercorns

Begin by removing the outer leaves of the cauliflower and breaking it into florets.  Thoroughly wash and set aside.  Then, pour the vinegar and white wine in a large pot and bring to a boil.

Once the liquid is boiling, drop all the florets in all at once and cook them for twenty minutes or so.  Turn off the heat and drain the florets using a strainer and transfer them in a bowl.  Let it sit in the bowl for about twelve hours to allow time to dry completely.

Get a clean glass preserving bottle and arrange the florets inside.  Sprinkle with salt and black peppercorns and pour in the extra virgin olive oil.  Make sure all the florets are entirely covered.  Put the lid back on and close tightly.
