Indian Baked Cauliflower Recipe

A touch of Indian flavour on our favourite cauliflower dish

Ingredients

1 medium Cauliflower
2 Tomatoes
2 Potatoes
3 Green Chillies
2 teaspoons Cumin seeds
1 inch fresh Ginger
1 teaspoon Turmeric
2 teaspoons Kalongi seeds
1 teaspoon Asofoetida
Salt to taste
Ghee for frying

Recipe Instructions

Prepare the cauliflower.
Wash the cauliflower and remove the stems. Boil or steam the cauliflower until almost done.

Fry.
Fry the ginger, tomato, green chillies, kalonji seeds, cumin seeds and turmeric in a little ghee and blend together.

Bake.
Cut the potatoes in the shape of fries and place these along with the cauliflower in a baking tray. Spread the fried mixture over the cauliflower and the potatoes. Bake for about 35 – 45 minutes at 350F. The florets will turn brown and the potatoes will be soft when ready.
