Potato Salad with Cauliflower and Green Beans Recipe

A tasty salad with cauliflower, potatoes and green beans

Ingredients

½ cup fresh cauliflower florets
6 medium red potatoes, cubed
1 ½ cups fresh broccoli florets
1 ½ cups chopped celery
½ cup julienned sweet red pepper
¼ cup fat-free Italian salad dressing
¾ cup cut fresh green beans, blanched
½ cup low-fat mayonnaise
¼ teaspoon pepper
2 teaspoons fat-free dry ranch salad dressing mix

Recipe Instructions

Cook the potatoes.
Cook the potatoes in boiling salted water until tender. Drain the potatoes and set aside.

Combine the ingredients.
Combine the celery, broccoli, beans, cauliflower, red pepper and Italian Dressing in a large salad bowl. Add the potatoes to the vegetable mixture.

Make the dressing.
Mix together the mayonnaise, salad dressing mix and the pepper. Pour this over the vegetable mixture and toss to coat.

To finish.
Cover and chill for at least 2 hours before serving.
