You do not have to be a great chef, not even a veteran cook, to make this quick and simple recipe. Because that’s what this is – quick and simple. And what’s more, it is also very delicious.
Prepare the following ingredients:
~A kilogram of cauliflowers, washed and broken into florets of about 1 cm each
~The juice from 5 lemons
~3 tbsp of red chili powder
~1 tsp of turmeric powder
~1 tsp of mustard seeds
~1 tsp of roasted Fenugreek seeds
~2 tsp of table salt
~a pinch of asafetida
Begin by soaking the florets in salted water. After about ten minutes, take out all the florets and drain them. Transfer in a bowl then set aside.
Heat oil in a large pan and add the mustard seed and asafetida. Cook until they begin to splutter before adding the florets.
Fry the florets for about two to three minutes then add the chili and turmeric powder. Fry for another two minutes.
Turn off the heat. Add a teaspoon of fenugreek seeds and lemon juice extract and stir. Let the mixture cool for a couple of minutes. Once it has reached room temperature, transfer the cauliflower in a clean jar and seal.
Pickled cauliflower is a great condiment served in a lot of dishes and even sandwiches.
