Roast Cauliflower and Red Onions Recipe

A very easy to make side dish that everybody will enjoy
Yield: 4    Preparation Time: 5 minutes    Cooking Time: 25 minutes
A cauliflower side dish with a bit of zing.

Ingredients

500g cauliflower, cut into florets
1 teaspoon ground coriander
2 red onions, sliced into thick wedges
2 tablespoons olive oil
Handful of fresh coriander, to serve

Recipe Instructions

Preheat oven to 220C

Toss the cauliflower, red onion, ground coriander and olive oil together in an ovenproof dish. Add salt and pepper to taste. Roast for 25 minutes turning occasionally until the vegetables are tender. Toss through the coriander and serve.
