Spicy Roast Cauliflower Salad Recipe

An inspired cauliflower dish that is tender and sweet

A truly inspired recipe that has a grainy yet tender texture with the sweetness of the cauliflower intensified.

Ingredients

1 head cauliflower
1 teaspoon cumin seeds
½ teaspoon chili powder
1 tablespoon olive oil
½ teaspoon ground cumin
½ teaspoon crushed coriander seeds
½ teaspoon paprika
Fresh coarsely ground black pepper
Salt
½ cup crushed macadamia nuts
1 bunch fresh coriander, chopped
200g feta cheese, crumbled

Recipe Instructions

Preheat oven to 180C.

Prepare the cauliflower.
Break the cauliflower up into florets and further chop up the florets into chickpea sized bits. Chop up the stems as well. Mix the olive oil, spices, salt and pepper in a baking tray and roll the cauliflower in the seasoning until well coated.

Bake.
Bake in the oven for 45 minutes until the cauliflower is tender.

To finish.
Remove from the oven and while still warm, throw in the coriander, crushed macadamias and crumbled feta. Stir to combine and serve while still warm.
