Very Simple Cauliflower Soup Recipe

A simple soup that your family will surely love
Yield:     Preparation Time: 10 min    Cooking Time: 40 min
The easiest cauliflower soup ever. So healthy too.

Ingredients

1 small white onion, thinly sliced
1lb of cauliflower, separated into florets
2 tablespoons of olive oil
2 teaspoons of salt
3 cups of hot water

Recipe Instructions

Cook the soup.
Warm the olive oil in a heavy saucepan that has a lid over a low heat. Add the onion and cook until they are transparent. Add the cauliflower, salt and ½ cup of water and raise the heat to medium and place the lid on top. Cook for 20 minutes. Remove the lid and add the remaining water, let this simmer for 20 minutes.

Blend.
Remove from the heat and allow to cool. Place in a blender and blend until smooth. Return to the pan and let the soup heat before serving. If the soup is too thick you can add a little water to thin it out.
